Apple Chai Puff Pancake with Mocha Chicken Sausage and Texy Marys

Apple Chai Puff Pancake


Yields: 4 large, or 8 smaller Servings


Ingredients

  • 1 cup whole-wheat pastry or all-purpose flour

  • 1 teaspoon baking powder

  • 1 tablespoon Sugar in the Raw

  • 1 1/2 tablespoons P.S. Flavor!™ Mai Chai

  • 5 eggs

  • 1 cup 1% milk

  • 1 teaspoon vanilla

  • 2 teaspoons unsalted butter

  • 3 cups fresh apples, sliced

  • 1 tablespoon honey

  • Juice of 1/2 orange

  • Citrus Maple Yogurt Sauce, recipe follows

  • Texy Marys, recipe follows

Method

  1. Preheat oven to 425 degrees F.

  2. In a medium bowl, mix together flour, baking powder, sugar, and 1 tablespoon P.S. Flavor!™ Mai Chai. In another bowl, beat eggs with wire whisk; whisk in milk and vanilla. Pour into dry ingredients and blend until moistened.

  3. Coat a 12-inch ovenproof skillet with nonstick spray. Spread 1 teaspoon of butter over bottom of skillet and heat over medium heat until water droplets “dance” over bottom. Pour all batter into skillet and cook for one minute. Transfer skillet to oven and bake uncovered for 20 minutes until pancake is golden and puffy.

  4. While pancake is baking, spray a nonstick skillet with cooking spray; heat. Add remaining butter and apples; quickly sauté until softened. Add honey, orange juice, and remaining 1/2 tablespoon of P.S. Flavor!™ Mai Chai; continue cooking until tender and syrupy.

  5. When pancake is done, remove from oven and spread with apples. Slice into wedges to serve; drizzle with Citrus Maple Yogurt Sauce.



Citrus Maple Yogurt Sauce

Ingredients

  • 2 cups nonfat plain Greek yogurt

  • 1 teaspoon vanilla

  • 1/2 cup fresh orange juice

  • 2 teaspoons P.S. Flavor!™ Mai Chai

  • 1/4 cup pure maple syrup


Method

  1. Whisk together yogurt, orange juice, maple syrup, vanilla, and P.S. Flavor!™ Mai Chai.


Mocha Spice Seared Chicken Sausages

Ingredients

  • 4 chicken apple sausages

  • 1 teaspoon olive oil

  • 1 tablespoon P.S. Flavor!™ Mocha Chili

Method

  1. Slice chicken sausages in half lengthwise. Roll in P.S. Flavor!™ Mocha Chili.

  2. Add olive oil to non-stick pan and heat. Add spiced chicken sausages; sear until browned on both sides. Serve.


Texy Marys

Yields: 4 large, or 8 smaller Servings


Ingredients

  • 1/4 cup (2 ounces) tomato juice

  • 3 tablespoons (1 1/2 ounces) vodka

  • 1 teaspoon Worcestershire sauce

  • 3/4 teaspoon prepared or freshly grated horseradish

  • 3 dashes hot pepper sauce, such as Cholula

  • 1-2 teaspoons P.S. Flavor!™ Texy Taco

  • About 1 cup ice cubes

  • 1/4 teaspoon fresh lime juice

  • 1 stalk celery, pickled okra, 1 lime wedge, optional garnish

Method

  1. In 11-ounce highball glass, stir together tomato juice, vodka, Worcestershire sauce, horseradish, hot sauce, and 1 teaspoon P.S. Flavor!™ Texy Taco. Fill glass with ice, then pour mixture into second glass. Pour back and forth 3 to 4 times to mix well.

  2. Leaving mixture in one glass, take the empty glass and rim with P.S. Flavor!™ Texy Taco by rubbing the rim of the glass with lime juice and then dipping into a plate of Texy Taco. Alternatively, split mixture into several rimmed shot glasses to make Mini Texy Marys.

  3. Carefully pour mixture into rimmed glass(es), and sprinkle with lime juice. Garnish with celery stalk, pickled okra, and lime wedge.

PRODUCE 3 fresh apples, such as Gala 1 lime 2 navel oranges MISCELLANEOUS 5 eggs 1 cup 1% milk 2 cups nonfat plain Greek yogurt Tomato juice Your favorite vodka Prepared horseradish Garnishes for Texy Marys: celery, pickled okra, etc.

CHECK YOUR PANTRY FOR 1 cup whole-wheat pastry or all-purpose flour Baking powder Sugar in the Raw Pure vanilla extract Canola oil or unsalted butter Extra virgin olive oil Honey Pure maple syrup Worcestershire sauce Hot pepper sauce, such as Cholula

EQUIPMENT Measuring cups and spoons Cutting board Chef’s knife Wooden spoon or silicon spatula Wire whisk 2 medium bowls 12-inch ovenproof skillet Nonstick skillet Pot holder Tasting spoons 2 - 11 oz highball glasses and/or 4 - 3oz shot glasses (for the Texy Marys)


PRE-PREPPED INGREDIENTS 3 cups sliced apples (3 medium apples)


INGREDIENTS TO HAVE READY 1 orange 5 eggs 5 chicken apple sausages Nonstick cooking spray 1 cup whole-wheat pastry or all-purpose flour 1 teaspoon baking powder 1 tablespoon Sugar in the Raw 2 teaspoons vanilla (divided) 2 teaspoons canola oil or unsalted butter 1 tablespoon honey 2 cups nonfat plain Greek yogurt 1/4 cup pure maple syrup 1 teaspoon olive oil 1 1/2 tablespoons + 2 teaspoons P.S. Flavor!™ Mai Chai (divided) 1 tablespoon P.S. Flavor!™ Mocha Chili

 

Ingredients to have ready for Texy Marys


1-2 teaspoons P.S. Flavor!™ Texy Taco

1/4 cup tomato juice

3 tablespoons vodka

1 teaspoon Worcestershire sauce

3/4 teaspoon grated horseradish

1 cup ice cubes

Hot pepper sauce

1/2 lime

1 stalk celery (optional)

Pickled okra (optional)
