Roasted Okra with Chipotle Dipping Sauce

Roasted Okra with Chipotle Dipping Sauce


Ingredients

  • 1 pound finger-sized okra

  • 1 tablespoon olive oil

  • 1 1/4 teaspoons P.S. Flavor!™ Creole Kitchen, or Kosher salt and black pepper

  • 1/2 cup sour cream

  • 1/4 cup of your favorite mayonnaise

  • 1 chipotle pepper from can of Chipotles in Adobo Sauce, roughly chopped (seeds removed, if desired)

  • 1 tablespoon adobo sauce from can of Chipotles in Adobo Sauce

  • 1 tablespoon lime juice

Method

  1. Pre-heat sheet pan in 375° F oven.

  2. Slice each piece of okra lengthwise, then quickly toss in olive oil and 1 tablespoon seasoning. Roast cut-side up in a single layer until nice and crispy, about 15 to 20 minutes.

  3. Combine the sour cream, mayonnaise, chipotle pepper, adobo sauce, lime juice, and the remaining Creole Kitchen in a blender or in the measuring cup of an immersion blender. Blend until thoroughly combined. Taste and add more adobo sauce, lime juice, and/or Creole Kitchen, as needed. Transfer the Chipotle Dipping Sauce to a small serving cup.

  4. Transfer the roasted okra to a serving plate and serve with the the sauce. Okra is best if eaten immediately, while still piping hot from the oven.
