Memorable Watermelon Salad

Watermelon, Feta, and Arugula Salad with Citrus Vinaigrette
Ingredients
1/4 cup freshly squeezed lemon juice
2 tablespoons fresh orange juice
1/4 cup white balsamic vinegar
2 tablespoons Dijon mustard
1 tablespoon honey
2 teaspoons P.S. Flavor!™ Citrus Spice
1/2 teaspoon P.S. Flavor!™ Creole Kitchen
2 tablespoons extra virgin olive oil
3 cups cubed (1/2 to 3/4 inch) seeded watermelon, drained (from a 2 1/2-lb piece, rind discarded)
1/2 small red onion, thinly sliced
6 cups baby arugula (3 oz) - may substitute baby spinach leaves
1/4 cup dry roasted unsalted pistachios, pine nuts, or sliced almonds
1/2 cup crumbled feta cheese
Coarsely ground black pepper, to taste
Method
Whisk together lemon juice, orange juice, vinegar, Dijon mustard, Citrus Spice, and Creole Kitchen in a large bowl, then add oil in a slow stream.
When ready to serve, toss drained watermelon, red onion, arugula, and toasted nuts with vinaigrette; then sprinkle with feta and cracked black pepper.
