A Simple Beat-the-Heat Crowd-Pleaser

Watermelon "Pizza"
Yields: 6-8 Servings
Ingredients
1 watermelon
1/2 cup crumbled Feta cheese
1/2 cup blueberries
2 teaspoons mint leaves
Pistachios or pumpkin seeds, if desired
P.S. Flavor!™ Creole Kitchen, or Kosher salt and freshly ground black pepper, if desired
Drizzle of extra virgin olive oil
1/2 tablespoon pomegranate or balsamic glaze
Method
Slice the widest part of a round watermelon in half. Lay the flat side down on a cutting board and cut a 1-inch thick slice from each half. Cut each half into 6-8 wedges.
Place them on a round dish like a pizza and top with Feta cheese, blueberries, and mint leaves. Sprinkle with nuts and seasoning, if using. Drizzle with olive oil and pomegranate or balsamic glaze.
