Watermelon "Pizza"

Watermelon "Pizza"


Yields: 6-8 Servings


Ingredients

  • 1 watermelon

  • 1/2 cup crumbled Feta cheese

  • 1/2 cup blueberries

  • 2 teaspoons mint leaves

  • Pistachios or pumpkin seeds, if desired

  • P.S. Flavor!™ Creole Kitchen, or Kosher salt and freshly ground black pepper, if desired

  • Drizzle of extra virgin olive oil

  • 1/2 tablespoon pomegranate or balsamic glaze


Method

  1. Slice the widest part of a round watermelon in half. Lay the flat side down on a cutting board and cut a 1-inch thick slice from each half. Cut each half into 6-8 wedges.

  2. Place them on a round dish like a pizza and top with Feta cheese, blueberries, and mint leaves. Sprinkle with nuts and seasoning, if using. Drizzle with olive oil and pomegranate or balsamic glaze.
